WINE-MAKING: The grapes are harvested at the time of perfect acid balance, vinified in white and fermented in steel. The wine remains on the fine lees until the moment of sparkling.
SPARKLING PROCESS: Martinotti’s method (Charmat) The wine is fermented in autoclave for a few weeks and then remains in contact with the lees for a few months.
